Ingredients
- 3/4 cup sugar
- 1/2 cup flour
- 1 tbsp cornstarch
- 1/4 tsp salt
- 1 12oz Evaporated milk(like carnation)
- 21/2 cups milk (I use half and half)
- 2 tbsp butter
- 6 Large eggs
- 2 tsp of vanilla
- 2 cups heavy whipping cream
- 2 bananas
- 1 box of vanilla wafers (add more if you like more cookies)
Instructions
Let's make pudding!
- Mix sugar, flour, salt together in a bowl. Set bowl aside
- In another bowl mix evaporated milk, milk, and egg yolks. Whisk until combined well.
- Add the dry ingredients to the wet ingredients and whisk until sugar is dissolved. About 3 minutes.
- Pour mixture into a saucepan over medium heat. Continue to stir until mixture thickens. Alternate between rubber spatula and whisk to make sure all ingredients are incorporated. Continue to stir until mixture has thickened. Once mixture coats the back of the spoon , remove from heat.
- Pour in a bowl and place cling wrap directly touching the pudding. Place in the fridge to cool 2-6 hours.
Assemble
- Remove pudding from the refrigerator and place in a blender with 2 bananas. Blend well.
- In a bowl add heavy cream and whip on high for about 5 minutes. Fold into custard mixture.
- In a bowl or pan, add half box of vanilla wafers. Crunch some and leave some whole cookies for added texture.
- Pour half banana pudding over cookies and repeat step. Decorate with remaining wafers on top. Enjoy!!

Instead of layering the bananas I blend mine into the pudding. I use this method for a few reasons. You don’t have to slices bananas while they turn brown waiting for you to layer them in. You are able to pour your pudding over the vanilla wafers making it easier for you. You are also using less dishes… did I mention easier for you?! The flavor of banana adds a burst of natural sweetness, while the smooth custard weaves the elements together, creating a decadent melody on your taste buds.

- Pour in a bowl and place cling wrap directly touching the custard. Place in the fridge to cool
- Remove custard from fridge and place in a blender with 2 bananas. Blend well.
